Vegetable Bake

This vegetable bake can use any vegetables you like (limit peas and corn). You can use pumpkin, turnip, zucchini, sweet potato, potato, carrot, mushroom, parsnip…whatever you like
It has a creamy texture even though it contains no dairy. It is also gluten free. Even my daughter enjoyed eating it.
For this recipe I used the vegetables in the ingredients list but you can add about 4-5 cups of your favourite veg which you will layer into your dish.

Broccoli Sorbet

What??? Are you serious? Yep, broccoli sorbet. Believe it or not it tastes really yummy. Even Miss Munchkins loves it. And she is 3. A hard age to please. It is super easy to make and choc full of delicious nutrition. Broccoli and mango are high in vitamin A and C; while blueberries are a…

Sweet Potato Goodness

Sweet potatoes are sooooo good, and because they taste so yummy I do have a little addiction to them at the moment. One of my favourite meals is steak, sweet potato fries and greens (either salad or veggies). 100 grams of sweet potato contains 1.6 g protein, 0.1 g total fats and 20.1 g carbohydrate. This delicious, golden and sweet vegetable is packed full of vitamin A, C, K choline, folate, calcium, magnasium, phosphorus, potassium, sodium and selenium; it is completely versatile with many creations made possible when you let your imagination run away with you.

I have used it in mash, as lasagne ‘sheets’, whole baked with beans and cheese on top, fries, as toast, roasted in the oven, in brownies, in sweet and savoury muffins…the list goes on…

Hot Chippies

You doesn’t love a hot chip? When it is crunchy on the outside and soft and fluffy on the inside. YUM. Unfortunately, when you buy manufactured chips you also get lots of nasties. So, why not make your own!

Not-so-naughty nuggets

Chicken nuggets seem to have become a staple in our childrens diet. They are full of additives and are nutritionally inadequate. These not-so-naughty nuggets use whole chicken breast and contain no nasties, so they are perfect for your little ones to enjoy.

Roast Vegetable & Quinoa Salad

This dish is so delish (sorry about the silly pun). I made up this recipe a few months ago and I was very impressed with myself 🙂 It is so simple to whip together and it gives you a nice big serving of your daily vegetables requirements.

Chocolate Milk

This is a favourite in my house. You can drink it cold or warm it up for a nice winter drink in the morning.
