This vegetable bake can use any vegetables you like (limit peas and corn). You can use pumpkin, turnip, zucchini, sweet potato, potato, carrot, mushroom, parsnip…whatever you like
It has a creamy texture even though it contains no dairy. It is also gluten free. Even my daughter enjoyed eating it.

Sweet potatoes are sooooo good, and because they taste so yummy I do have a little addiction to them at the moment. One of my favourite meals is steak, sweet potato fries and greens (either salad or veggies). Chicken nuggets seem to have become a staple in our childrens diet. They are full of additives and are nutritionally inadequate. These not-so-naughty nuggets use whole chicken breast and contain no nasties, so they are perfect for your little ones to enjoy.
This dish is so delish (sorry about the silly pun). I made up this recipe a few months ago and I was very impressed with myself 🙂 It is so simple to whip together and it gives you a nice big serving of your daily vegetables requirements.
This is a favourite in my house. You can drink it cold or warm it up for a nice winter drink in the morning.
